Significant reductions in calories can be realized when fruits are packed in "SWEET 30" syrups. Independent studies of flavor have shown that the "dietetic" packs are invariably preferred over water packs, and in some instances, are preferred over sugar syrup pack fruit.
Comparatively little reformulation is required to produce quality "dietetic" packs. There are two main considerations in going from sugar to "SWEET 30" sweeteners---use level of sweetener or combination, and whether or not to use a bodying agent.
Use level will vary, depending on individual taste and the type of fruit. As preference dictates, sweetness can vary from slight to moderate to intense, with the slight to moderate receiving the highest preference ratings.
Both "SWEET 30" cyclamate and cyclamate-saccharin blends perform well in canned fruits. Use levels for initial tests can be determined from the relative sweetness to sucrose. Relative sweetness of cyclamate is about 25 to 35, and of 12:1 cyclamatesaccharin, about 55 |
